My crazy schedule paired with my kids’ even crazier schedule leaves us with not a lot of time to eat dinner at home. There are even times that we don’t eat that healthy (*gasp*)! What can I say? I’m exhausted. In my life, I need to resort to sane cooking techniques. You know, easy recipes that can be whipped up quickly to satisfy the whole family.
When I’m creating my shopping list for the week, I plan out our dinners according to the day’s activities. I recently stumbled upon an easy Pillsbury Crescent Taco Bake that looked like something that I could sanely make in between homework and baseball practice. Not to mention my kids have a strong love affair with tacos…
Taco Bake
You start by heating your oven to 375°F. Unroll the crescent dough and separate it into the 8 triangles.
Place the triangles in an ungreased 9-inch square pan or 10-inch pie plate. Press the dough over the bottom and up the sides of the pan to form the crust.
In a 10-inch skillet, cook the ground beef over medium heat for 8 to 10 minutes, stirring occasionally, until it’s thoroughly cooked. Drain the juices from the meat. Stir the salsa and taco seasoning mix into the cooked beef and simmer for 5 minutes. Spoon the meat mixture into the crust-lined pan. Sprinkle the meat with shredded cheese.
Bake the “pie” for 14 to 17 minutes or until the crust is a deep golden brown and the cheese is melted.
Served the taco pie topped with lettuce and tomato.
This meal was a big hit! Instead of fresh tomatoes on top, you can also use fresh salsa for an extra kick of flavor. (Obviously not for the kids…) Did I mention I added more cheese to mine…we LOVE cheese! You know how else it would be great? Sour cream. Mmmmmm!

- 1 lb lean (at least 80%) ground beef
- 3/4 cup salsa
- 2 tablespoons taco seasoning mix (from 1-oz package)
- 1 cup shredded Cheddar cheese (4 oz.)
- Shredded lettuce, as desired
- Diced tomato, as desired
Preparations
