For as long as I can remember, my mom has been making banana bread. There was nothing like a slice right out of the oven with a cold glass of milk. Mmmmmmm…..
My kids LOVE muffins of any kind. Something about them. Maybe it’s because they resemble cupcakes? Whatever it is, I don’t feel guilty making them. I love bananas. Trouble is I can’t seem to eat them fast enough and I always have about 2-3 that go so brown no one wants to eat them anymore. What’s a girl to do? Make muffins!
1 1/4 C Flour
3/4 C sugar
1/2 tsp salt
1/2 tsp baking soda
1/2 C vegetable oil
2 VERY ripe bananas
Preheat oven to 350°. Sift dry ingredients in bowl. In a separate bowl, mix the wet ingredients with a beater until will mixed. Slowly add the dry ingredients. Bake in cup cake pans for 15-20 minutes. (For bread, bake in tube pan for 30-35 mins.)
Add walnuts, chocolate chips, or whatever else you think goes with bananas.
