The weather outside is HOT and sticky. Ice cream is the perfect treat to help cool down and forget about the heat. I recently shared a quick recipe for homemade ice cream sandwiches but wanted to do something a bit bigger to satisfy a whole crowd.
Spending countless hours perusing Pinterest like so many others do, I often find myself salivating over yummy recipes and saying to myself, “I can do that!” and then I never do. Well, I have been DYING to try and make an ice cream cake for quite some time. The upcoming 4th of July holiday is a perfect time for me to do it!
This Red White and Blue Ice Cream Cake is so easy to make and will be sure to please your crowd. It’s a sin not to make it!
Divide the mixture in half and add red food coloring to one and blue to the other.
On a tray small enough to fit in the freezer, stack 4 ice cream sandwiches. Top the sandwiches with the blue topping making sure not to go over outer edges.
Top the layer with 4 more sandwiches. This time you will top it with the red topping. Remember: make sure not to go over outer edges.
Top the cake with 4 more ice cream sandwiches. Cover the entire cake with another container of whipped topping.
Be sure to place the cake in the freezer for at least 2 hours.
Once you’re ready, slice and serve this yummy treat!
