So just yesterday I was at BJ’s Brewhouse with a friend celebrating small victories and giving her an update on a parent meeting from school. After sharing some appetizers and salads (and of course Prosecco!) we were approached by the waitress about $3 Pizookies. Um, yes, please!
Although I was trying to be “good” and stay away from sweets, I had to indulge. Yup. No guilt, just Pizookie!
What is a Pizookie you ask? It’s a “pizza” cookie. It’s essentially a cookie cake, but the name PIZOOKIE is just so fun to say!
That meant, of course, that I had to make some at home. Not because I wanted to share with my family, but because I wanted a Pizookie all the time.
It’s so simple, it’s sinful.
Start by preheating your oven to 350º. On the stove, place 8″ small cast iron skillet or round pan over low heat and melt your butter.
Next, add the sugar, brown sugar, beaten egg, and vanilla. Mix all of these ingredients well.
Then add the flour, baking soda, and salt. Mix again until it’s all well blended.
Add in your chocolate chips and stir to evenly distribute them.
Bake the Pizookie for 15-20 minutes or until it’s golden brown. Allow the Pizookie to cool for about 10 minutes. (You want to eat it warm.) Cut it into slices and top with vanilla ice cream or whatever flavor ice cream you want. I like eating it straight from the pan!!!
