We are quickly approaching the end of summer. The end of long days, hot nights and sleeping in. Since we are getting ready for school to start again, I want to celebrate the end of lazy days and hello to getting my schedule back! (Have I mentioned that I can’t stand chaos and NEED my schedule back?)
“The Nag’s” newest obsession is with mint chocolate chip ice cream. And I’m just obsessed with cupcakes. Why not put his new favorite ice cream on a cupcake? Mom for the WIN!
This quick and easy recipe for Mint Chocolate Chip Ice Cream Cupcakes is a perfect way to get the kids involved in the kitchen and celebrate before the start of the new school year.
Ingredients
- 1 box Dark Chocolate Cake Mix
- 3 Eggs
- 1/2 cup Vegetable Oil
- 1 quart Mint Chocolate Chip Ice Cream
- 2 tbsp Milk
- 1 cup softened Butter
- 4 cup Powdered Sugar
- Mini dark chocolate chips
Preparations
- Prepare cake batter according to box directions.
- Fill cupcake liners about 1/3 full and bake 10-15 minutes.
- Remove ice cream from freezer and allow to soften.
- Allow cupcakes to cool completely.
- Fill remainder of cupcake liner with ice cream pressing down to remove trapped air.
- Place in Freezer to harden for at least 1 hour.
- In a large bowl, cream the butter and Powdered Sugar.
- Beat in the milk. Mixing until fluffy.
- Transfer the icing to the corner of medium size zipper bag, try to minimize trapped air and close. Clip a small piece off the corner to pipe.
- Pipe icing around top of each cupcake and return to freezer until ready to serve.
- Remove cupcake liner before serving.
- Add mini dark chocolate chips for cuteness!


So this can totally be modified with your favorite ice cream. Imagine the possibilities: chocolate chip cookie dough, strawberry, coffee, butter pecan….it’s just ENDLESS!

These look so yummy and I LOVE mint chocolate chip. I’d probably just top them with vanilla bean so that I didn’t scare away any of those yummy flavors!
