This summer I have let myself go. I haven’t worked out, I’ve eaten everything in sight, and I’ve laid around most of the time when I wasn’t working. This sloth-like quality has taken a toll on my “bottom line.” In plain English, my butt has gotten really big!
The problem is….I LOVE FOOD!
One of my favorites is tacos. Hard shell. Soft shell. Beef. Chicken. Shrimp.
You get my drift.
But eating tacos isn’t helping my “bottom line.”

Check out my Lettuce Wrap Tacos.
While the kiddos are enjoying those crunchy tortilla shells that hold all the goodies, I’ll wrap mine in a crunchy lettuce “shell.” You’re probably thinking…”why didn’t I think of that?”
Now I don’t have to feel so guilty while enjoying a favorite meal. (I can save the guilt for fried ice cream!!! ๐ )
Ingredients
- Romaine Hearts
- 1 lb Lean Ground Beef or Ground Turkey
- 2 tbsp Taco Seasoning
- 1/3 cup Water
- 8 oz Shredded Cheese
- 1 diced Tomato
- additional Taco Toppings
- 1 tbsp Chili Powder
- 1 tsp Cumin
- 1/2 tsp Salt
- 1/2 tsp Black Pepper
- 1/2 tsp Paprika
- 1/8 tsp Garlic Powder
- 1/8 tsp Onion Powder
- 1/4 tsp Brown Sugar
Preparations
- Brown meat and drain excess grease.
- Add water and taco seasoning (either recipe above or ready-made) and heat on medium until liquid reduces, stirring occasionally.
- Separate romaine leaves, trimming any excessive stalks on end.
- Place about 1/4 cup of taco meat on each leaf.
- Top with cheese and tomatoes.
- Add any additional toppings you desire and serve immediately.
Such a great idea to use lettuce instead of a taco shell. These look so yummy and healthy…this is a must make recipe

I wrap everything in lettuce, but never tried tacos! Crazy! I need to do this – I’m always trying to cut carbs!
