Salty potato chips are SOOO good! Now think about salty potato chips that are warm straight from the oil. HEAVENLY! Sometimes I like to dip my chips in something with a bit of a bite to it like spicy mustard. Being that these chips are homemade and will likely be warm when you eat them, ketchup is the way to go. Sriracha ketchup is even better!
Homemade potato chips are so easy to make. I’m really not sure why we don’t make them more often.
For the potato chips, you don’t really need much. Just potatoes, oil, salt, and pepper.
First things first. Wash the potatoes. (I really hope I didn’t have to tell you that.)
Using a mandolin slicer, thinly slice potatoes and place them in cold water. PLEASE be careful with the mandolin. I sliced my hand once using one.
In a heavy pan, heat vegetable oil to 400º.
This step is VERY IMPORTANT! Dry the potatoes one batch at a time on paper towels. You do not want water to touch the hot oil…it’s not a good thing at all.
Prepare another plate lined with paper towels for the chips as they come out of the oil. This will soak up the excess oil.
Cook the potatoes in small batches in the oil, stirring and turning often. Be careful not to let them burn.
Remove the potato slices when they are brown and crispy and place them on the prepared plate.
Salt and pepper them immediately. Repeat the steps with the remaining potatoes.
You can serve with Sriracha Ketchup (1 teaspoon Sriracha Sauce for every tablespoon of Ketchup). Easy peasy!
