Pasta is a staple in this house. We eat it any way we can get it! I adore Mac & Cheese. Who doesn’t? Actually, Little Ricky doesn’t…he’s weird.
Changing up our mac & cheese intake a bit keeps this family on their toes. That’s why these Fried Mac & Cheese Bites are a perfect way to celebrate a classic!
So, the first step is to boil your elbow macaroni until it’s tender. No one likes limp pasta. Drain the pasta and set it aside.
Next up, you need to shred your 2 blocks of sharp cheddar cheese. This is a great workout for your arms! You’ll need to burn a few calories before you eat these suckers!
In a large pan, melt 1/4 cup of butter over medium heat. Add in a 1/2 cup of flour and mix until it’s a light brown color. This is what you call a roux. Add in 1 cup of milk and whisk it all until it’s nice and thick.
Now it’s time for the cheese to make an appearance. Add the sharp cheddar cheese into the mixture one handful at a time. This will help the cheese to not clump up. Mix it until the cheese is all melted and smooth. YUM!
Now you can add your cooked macaroni to the pan and mix it all until the pasta is well coated. Add your salt and pepper.
You’ll want to transfer the pasta to a container and refrigerate it for 1 hour or until it’s nice and cold.
Line a baking sheet with wax or parchment paper. Form 1″ balls with the cold mac & cheese and place them on the prepared pan. Place the mac & cheese bites in the freezer for 1 hour.
Now you need to beat 2 eggs and add 1/4 cup milk in a bowl to make the egg wash. Dip the balls into the egg wash and roll them in bread crumbs. Don’t forget to coat them completely.
Heat oil in a skillet (about 1/2-3/4″ deep) or a deep fryer to 320º. Fry each mac & cheese bite for about 3-4 minutes until they are golden brown. Place them on a dish lined with a paper towel to drain.
Can you just taste the ooey gooey Mac & Cheese Bites? I sure can!

- 1 lb Macaroni
- 2 (8 oz) Blocks of Sharp Cheddar Cheese
- 1 3/4 cup Milk
- 1/2 cup Flour
- 1/4 cup Butter
- 2 Eggs
- 3 cup Seasoned Bread Crumbs
- Salt & Pepper to taste
- Vegetable Oil (for frying)
Preparations

- Add cooked macaroni to pan and mix until well coated.
- Add salt and pepper.
- Transfer to container and refrigerate for 1 hour or until cold.
- Line a baking sheet with wax or parchment paper.
- Form cold macaroni and cheese into 1" balls and place on prepared pan.
- Place in freezer for 1 hour.
- Beat eggs and add 1/4 cup milk in a bowl to make egg wash.
- Dip balls into egg wash then roll in bread crumbs to coat completely.
- Heat oil in deep fryer to 320º or fill skillet 1/2-3/4" deep with oil and heat over medium high to 320º.
- Fry for about 3-4 minutes and drain.
