I’m personally in love with the colors of the spring and the baby chicks, bunnies, and ducks that are all around. During springtime, there are many gatherings whether it be for Easter, Passover, or family get-togethers. Gatherings mean desserts!
Here’s a Coconut Bird’s Nest Cupcake recipe that will knock the socks off your guests!
They are so easy to make, and they will satisfy every sweet tooth out there. YUM! You will simply make the cupcakes according to the box directions. Set them to the side to allow them to cool.
For the nests, you will toast the coconut on a cookie sheet in a 275º oven for 15 minutes.
Melt the white chocolate in the microwave in a microwave safe bowl by heating for 30 seconds then stirring (repeating until chocolate is melted and smooth). Mix the coconut and chocolate until they are well blended. Spoon the coconut mixture onto parchment or wax paper in heaping tablespoon sized portions (these will sit on top of the cupcakes as nests).
Let them sit for a few minutes to set a bit, then using a teaspoon make an indentation in the middle. Place 3 candy eggs (I like Cadbury Mini Eggs) in the middle of each nest before the chocolate hardens. Transfer the nests to the refrigerator for 10 minutes to set completely.
To make the frosting, cream the butter, vanilla and powdered sugar in a mixing bowl. Slowly add milk until the desired consistency for the icing is reached. Ice the tops of the cupcakes and place a nest on the top of each.
